The Arancino (or Arancina, there’s still debate in Palermo!) is a ball of rice, breaded and deep-fried—a masterpiece of flavor. It’s the quick lunch, the snack, or the perfect easy dinner. The classic version is “al ragù” (with meat, peas, and tomato sauce), but don’t miss the “al burro” (with cooked ham and stringy mozzarella).
2. Pasta alla Norma: An Ode to Sicily 🍆
Born in Catania and dedicated to the composer Vincenzo Bellini (because it is, indeed, an opera of art!), Pasta alla Norma is the purest expression of Sicilian cuisine. It consists of short pasta (usually maccheroni or penne), fresh tomato sauce, fried eggplant (melanzane), and a generous dusting of grated salted ricotta (ricotta salata). Simple and divine!
3. Sicilian Cannoli: The Crispy, Sweet Triumph 🌸
